It's better not to ask mom's how difficult is to feed their naughty kids especially if it's the most healthy vegetables. So this vegetable cutlet recipe is for those struggling moms who wants to feed their kids something healthy. It's a simple trick to feed them those vegetables they hates to have during the meal time.
Kerala cutlets recipe:
Ingredients:
1)Potatoes cooked and mashed
2)Vegetables- raw banana, Chena elephant yam, cabbage, carrot( any vegetables you want)
3)Finely chopped Onion
4)Finely chopped Green chilly
5)Finely chopped Ginger
8)Finely chopped Garlic
7)Turmeric powder
9)Garam Masala
10)Chopped coriander leaves
11)Oil as required
12)Salt as required
13)Breadcrumbs as required
14)All purpose flour ~ Maida
15)Water as required
Method:
*Cook the potatoes, mash it and set aside.
*Cook the chopped vegetables till it becomes soft.
Then mash the cooked vegetables and set aside.
*Heat oil in a pan and add the finely chopped ginger, garlic, green chilly and sauté till the raw smell disappears.
*Add the finely chopped onion and sauté till light brown in color.
*Then add turmeric powder and garam masala and fry for 2-3 minutes on low flame.
*Add the mashed vegetables, and mix well.
*Add the mashed potato and coriander leaves and salt, mix them well and sauté for 1-2 minutes.
*Remove from flame.
*Add some bread crumbs and mix well using hand.
*Allow the mixture to cool for sometime; Meanwhile prepare a slightly watery flour batter by mixing all-purpose flour with enough water.
*Make equal sized balls from the prepared masala. Then slightly flatten the balls.
*Dip it into the flour batter, then roll it into the breadcrumbs. Make sure that it is well coated in all the sides.
*Heat oil in a heavy bottomed pan, once the oil becomes hot, place the prepared cutlets slowly into the oil as batches depending on the pan size.
*Fry in low flame till it become golden brown on both sides.
*Then keep the fried cutlet in a kitchen towel or tissue,
*Serve veg cutlets hot with some sauce.
